Tyramine is a naturally occurring amino acid found in fermented foods. This protein is broken down in the body with the help of an enzyme called monoamine oxidase (MAO). If you don’t have enough amounts of this enzyme, you are prone to headaches caused by high levels of tyramine in the body.
