Leafy Green Vegetables, Potatoes or Sweet Potatoes, and Snack Foods

Leafy green vegetables like beet greens, spinach, and chard contain high levels of potassium. For example, one cup (30-38 grams) of raw vegetables contain 136-290 mg of potassium. These leafy vegetables usually reduce significantly in size when they are cooked, but they still contain the same level of potassium. Experts advise people with kidney disease to eat leafy green vegetables raw. Other leafy vegetables, such as spinach contain high levels of oxalic acid, an organic compound that can produce oxalates, a chemical that is once bound to calcium.
Potatoes and sweet potatoes contain high amounts of potassium which can affect the kidneys. If you have kidney disease, it is advisable to limit or stay away from potatoes and sweet potatoes. You can reduce the potassium levels of potatoes by soaking them in water.
Snack foods like pretzels, crackers, and chips usually contain high amounts of refined carbs and salt. People with kidney disease are advised to stay away from these meals. Some snack meals, like potato chips, contain high amounts of minerals, like phosphorus [5] or potassium.
