Leaching potassium from vegetables

Many vegetables are high in potassium. Cooking them by a method known as leaching reduces the amount of potassium in them. Not all the potassium is removed, however, so you must remain mindful of how much you consume.

To leach vegetables [6] or other similar food items peel and place them in cold water to stop them from darkening first. Next, slice the vegetables. Rinse them in warm water for a few seconds then soak them again in warm water for two hours. Make the water 10 times the vegetable amount. Rinse them one more time in warm water after you pull them out before cooking.
