Some Vegetable Recipes for Someone with Ulcerative Colitis

There are some vegetable foods someone with ulcerative colitis can prepare to ensure they get enough minerals and vitamins. These foods also contain low amounts of fibre to prevent digestion problems. Some vegetable recipes you can attempt include;

  • Mediterranean vegetable soup: Ingredients for this may include zucchini, onion, a cup of water, yellow squash, oreganos, low sodium vegetable broth, low-fat yoghurt, tomatoes, garbanzo beans and chickpeas. Over a heated sauce pan, you can add onion and fry quickly for a few minutes. Add yellow squash and zucchini and fry quickly for another few minutes. Then add water, chickpeas, diced tomatoes, oregano and vegetable broth and boil the combination. After a while, reduce the heat for some minutes and add yoghurt.
  • Butternut squash soup: Ingredients may include peeled butternut squash, nutmeg, yoghurt, olive oil, onion, vegetable stock, and black pepper. Heat olive oil in a pot and add onions for some minutes. Add squash and vegetable stock and cook for up to 20 minutes. Using a hand blender, mash the ingredients in the pot. Cool the soup a bit then add salt, nutmeg and black pepper.

The two vegetable foods explained above are filled with a lot of minerals like sodium with low fibre content, which makes them easy to digest.
