Apple cider vinegar is thought to be effective in blood sugar management. A 2017 paper [3] established that this vinegar helped regulate post-meal glucose and insulin levels.

The effect of apple cider vinegar in lowering post-meal blood sugar has mostly only been observed when it was consumed with high-carb meals. A study in people with type 2 diabetes [4] also found that this vinegar was better at regulating blood glucose when it was consumed with high-carb meals that digested rapidly than those that digested more slowly.

It is unclear whether this postprandial anti-glycemic effect is also seen after eating low-carb meals.
