Asparagus

Although most of what we’ve discussed is meat, vegetarians might be excited to know there are many low-carb vegetables they can eat. Asparagus is one of them. The young, succulent roots of this very delicious plant can be cooked and eaten as vegetables.
Asparagus contains one of the lowest amounts of carbs in plants. A 100-gram serving of asparagus contains only 2 grams of carbs or 2 percent [10]. In addition to being a low-carb food, this vegetable is also high in vitamin C and K, folate, fiber, and carotene. It also contains a relatively high amount of protein for a vegetable. Asparagus doubles as a low-fat food [11].
